Needed to open sushi. Your business: how to open a sushi bar from scratch

The owner of a network of pavilions with inexpensive Japanese food, Alexander Zhukovsky, told how his business is functioning and how new fashionable food is beginning to crowd out the usual sushi and rolls. Based on materials: www.business.ngs.ru

Alexander created in Novosibirsk a new format of catering establishments - a network of pavilions selling Japanese takeaway food. In an interview, the businessman tells how he managed to bring people closer to the rolls, how much you can earn on love for “Japanese food” and how to trade in the future when the audience is tired of land and rolls. Alexander, how did you come up with the idea of trading Japanese food in virtually fast-food format - like shawarma and hot dogs? I spied the idea when I was vacationing in Thailand and decided why not organize the same with us. The main idea was to combine the production and sale of take-away rolls in one place. This format has its advantages. Firstly, it allows you to significantly save on rent, security, waiters, and therefore reduces the cost of the final product without losing its quality. Secondly, you always get a fresh product, and this is very important in Japanese cuisine (try to eat a roll of a 2-day statute of limitations). And thirdly, on-site production allows you to quickly respond to changing demand - if some dish sells better, therefore, you can do more. The first such point that we discovered in the shopping center, which is called "shot." We occupied only a few square meters, but sales were very high. Most importantly, then we managed to form a good team, which set the level for the development of the entire network. The conclusion we made: a similar format allows attracting not only existing lovers to Japanese cuisine, but also those who, for whatever reason, including financial ones, never visit cafes and restaurants with Japanese food. What is the markup level at your points? The average mark-up in our pavilions is set at 130%. For catering, this is very small. In the same restaurants, there will be a margin of at least 250% on the popular Philadelphia roll. Of course, we can trade a little more expensive, but our task is to make the product more accessible to the masses. Relatively speaking, so that the grandmother who went for groceries could visit our point and buy herself a portion of inexpensive rolls. And I believe that it will not be possible to trade cheaper anymore - for this you need to save on raw materials, which will naturally affect the quality of the finished product. And the consumer already understands a lot in Japanese cuisine and reacts quickly to any changes.

Approximate daily turnover of a Japanese takeaway outlet: Average bill - 300 rubles. The number of purchases per day - from 100 units. TOTAL: from 30 000 rub. per day or from 900 000 rubles. per month.

But what about competitors who can offer even lower prices: the same supermarkets and delivery services? As for supermarkets, I do not see any obvious competition from them. Agree, what lies on the window is unclear how many days does not cause much confidence among consumers. After all, people understand that they consume this dish fresh, made right now. Delivery services also have disadvantages. One of the main ones is the minimum amount after which the order will be delivered to you free of charge, otherwise you can’t talk about any benefit. Plus, it is not known in which "basement" these rolls are produced. It’s one thing if it’s a well-known company in the city, it’s quite another thing - it is constantly changing and disappearing delivery services, in which products are made for some reason and for some reason. I am sure that our key advantage is that we cook the dishes practically in front of the buyer. In the near future we will put in our storefronts on which fish and seafood will be laid out, from which we produce dishes, as is customary in classic sushi bars. What is the amount of investment to open one such point? Equipment alone at our point costs about 1.7 million rubles. We rent a pavilion, and if we built, then the costs would be several times greater. Of course, you can save a lot. I saw outlets that fit into 200 thousand rubles. True, they closed relatively quickly. This is only better for us - let the consumer have something to compare with. Approximate investments in opening a turnkey Japanese cuisine pavilion:

 • Purchase and installation of the pavilion - from 500 thousand rubles.
 • Summing up communications (water, electricity, sewage) - from 200 thousand rubles.
 • Kitchen and refrigeration equipment - from 400 thousand rubles.
 • Trading equipment - from 100 thousand rubles.
 • Business registration, project approval, permits - from 50 thousand rubles.
 • Purchase of raw materials and ingredients - from 100 thousand rubles.
 • Personnel training - from 50 thousand rubles.
 • Advertising - from 30 thousand rubles.
 • Other expenses - from 100 thousand rubles.

TOTAL: 1,530,000 rub. About 10 years ago, sushi and rolls were almost an elite product, but today they are traded on city streets as ordinary fast food. Where will this segment of catering develop further? I believe that rolls are a dead end in which there is nowhere to develop. Three types of enterprises have already developed in this area: cafes, delivery and pavilions - what else can you think of here? In my opinion, those entrepreneurs who make a bias in expanding the cuisine of South-East Asia as a whole have great prospects. For example, we are selling more and more noodles. Of course, we had to work hard and even invest some money in order to bring its quality to mind. But now this dish is in high demand among our customers. Sushi and rolls are a snack, you can’t fully dine with them. But noodles, meat in sauce, fried chicken are normal food for every day. Moreover, the food is very diverse, as there are plenty of options for dishes. The time will come when Asian eateries, with small halls designed for takeaway trade, will become popular with us, as well as with the West. In such places, a lot of tasty and inexpensive freshly prepared food will be sold that you can buy on the way home or in order to eat at work. Here really is where to develop.

Japanese dishes are now very popular. There are not many young people in our country who have not tried at least sushi and rolls. It is fashionable, tasty, interesting. And people are happy to abandon the usual dishes in favor of exotic Japanese food. Especially if it is possible to order it with delivery. And if there is a high demand, you need to provide an offer. You just need to learn how to open sushi delivery, using the advice of practitioners and experts. Start exploring this question right now - by reading our article.

The scope of delivery of Japanese food is still quite a free niche in which demand exceeds supply. There are many establishments with Japanese themes (and, therefore, cuisine) in each city. But there are still not enough companies offering such food with delivery. So this business has good prospects and every chance of prosperity.

Register your business

A business such as sushi delivery requires registration with government agencies. The easiest way to work as an individual entrepreneur. The legal process will not take much time. Submit documents, pay 800 rubles. - And in a week you are already officially IP.

As for the payment of taxes, the most profitable form is simplified (USN). When preparing documentation, you must specify your type of activity. In your case, choose "Supply of catering products." The code 55.52 corresponds to it.

All legal issues can be entrusted to a competent person, using the services of a lawyer. There are also companies on the market that specialize in enterprise registration services. But this is an additional expense item.

What format to work in: 3 ways to organize business

Business organization is possible in three scenarios.

Delivery of another's food

Immediately visit places with Japanese cuisine and offer them delivery services. Those who work for a long time usually already have such partners or their own couriers. But it’s still worth clarifying. Pay special attention to establishments that have recently opened. It is likely that their delivery has not yet been established.

This is the easiest way to organize. Everything is extremely simple and comes down to mediation: we find several establishments that prepare Japanese food, and conclude contracts with them for the supply of their culinary masterpieces. Then we just accept applications and arrange delivery.

Home-made food delivery

This form of work is more troublesome. After all, you need to rent a room, convert it to your needs, find good cooks, hire staff, etc. But the profit will be more substantial. And there are more prospects for development.

Takeaway food

Additional service to existing production. To open takeaway sushi, a business plan can be found on the Internet. Use other people's developments for an example. Based on them it will be easier to make your own.

How to choose a room

Since not clients will come to you, but you will come to them, the beauty and presentability of the premises are not significant. It is much more important to equip it in accordance with the requirements of Rospotrebnadzor. In general, about 20 thousand rubles will be needed for equipment and repair of the premises.

A room with a bathroom of 30 square meters will be enough. Please note that you will have to constantly take out and load products. Ideal option - 1st floor. Also, it should be convenient access by transport. Such a room will cost from 25 to 50 thousand rubles. monthly (depending on property prices in your area).

What equipment will be needed

To organize a business, you need to purchase the necessary set of equipment

When compiling a list of what you need to open sushi delivery, first bring in refrigerators. Japanese food tends to deteriorate quickly, and without refrigerators everything cooked will soon have to be thrown away. You will also have to keep raw materials in the cold.

If the business is conceived on food delivery, then your company will need transport. What exactly it will be - a car, a scooter or maybe a regular bicycle - depends on the specific situation.

When choosing a transport, consider the delivery volumes: how much food will have to be transported per day. And evaluate the distance your courier will have to travel. If a bicycle is enough for a small town, then something more speedy is needed in the metropolis. To save money, you can take a used transport. Or hire a courier with your own vehicle.

The most important thing is the purchase of equipment.

Table. Necessary equipment

Additionally, you will need:

 • Pans
 • Pots for cooking rice.
 • Thermos for storage of rice.
 • Special sharp knives.
 • Stone for sharpening knives.
 • Boxes for the delivery of food.
 • Disposable tableware.

This will require additional investments in the amount of 10-15 thousand rubles.

We recruit staff

We proceed to the collection of the team. Key figures in your business:

 1. Reception Manager.
 2. Courier.
 3. Cook.

To get started, it’s enough to take 2 people for each position. The salary level depends on the region. This can be easily ascertained by contacting popular job search sites and employees. Determine your average salary level and immediately include the estimated costs in your sushi delivery business plan.

Cooks should be selected with particular care. The success of the whole thing depends on their skill. Look for people who can cook Japanese food not only tasty, but also fast. The higher their productivity, the more they will be able to serve customers. And that means more profit.

Important qualities for managers and couriers are friendliness and courtesy. To place orders among applicants, select cultural girls with competent speech and pleasant voices. Courtesy, composure, neatness and good knowledge of the city are important for the courier.

Since we are dealing with food, each employee should have a health record book. Its cost is 2-2.5 thousand rubles. for each employee. The book needs to be renewed in a timely manner.

Subtleties of business promotion

Fans of Japanese food, above all, are young people under 40 years old. This is your target audience, around which you need to build your service and promotions. Therefore, PR in places where they are often.

First of all, on social networks. If you devote proper time to this, social networks will become a regular source of customers. Be sure to create pages in the most popular networks, fill them with interesting materials and constantly add representatives of your target audience to your friends.

In parallel, submit ads with photos of ready-made dishes on local forums and free boards. Before you open sushi delivery, order advertising in transport, hire students to distribute leaflets and put up ads in the city. Periodically resort to these methods of promotion and in the process of the enterprise.

If you bought a car for delivery, you can place an advertisement on it (phone, company name, the inscription "sushi delivery", etc.). Arrange promotions for regular customers. Develop special offers for them (discounts, bonuses, gifts for the holidays) that will encourage these people to continue to use your services.

In general, the list and extent of promotional events is determined by the budget that you are willing to spend on it. If finances allow, order your own website. It will be more convenient to post information, and in the eyes of customers will give you solidity.

In order to gain trust and acquire regular customers, focus on 3 indicators in your work:

 1. The quality and freshness of the food.
 2. Delivery speed.
 3. Courtesy of service.

Let these items be constantly under your control. Carefully select suppliers of raw materials and check for freshness everything that they bring. 1-2 such errors will cost you a reputation and massively scare people away.

How much to invest

Before you open the delivery of sushi, we make the initial costs in the business plan. So, we found out that for equipment we need about 100 thousand rubles. We calculate the other necessary expenses at the start:

Table. Capital investments

Taking into account the cost of equipment, the sum of initial costs of 400 thousand rubles is obtained. You can reduce costs by hiring a courier with your own transport, and first take orders personally. In general, 300 thousand rubles will be enough to organize such a business in a small city. For large cities, you will need from 500 thousand rubles.

In 24 hours, a small enterprise with established work and a flow of customers executes from 30 to 40 orders. The average cost of one order is 500 rubles. With shift work, you can count on revenue in the region of 500,000 rubles.

The profitability of the sushi delivery business is 20%. Initial investments pay off in 1-1.5 years.

You will find out what equipment is needed to open your own sushi bar. In what format can I open such an institution and how much money will it take to start? And we will tell you with a real example how to avoid difficulties in starting a business.

Good afternoon, dear readers!

Looking for an up-to-date idea for a catering business? Open your own sushi bar! The implementation of this idea has many formats. Choose the most suitable and act!

I’m Alexandra Kadyntseva, financial expert of HeatherBober magazine. From the article you will learn how to open your own sushi bar, how much it costs and how to act so as not to burn out.

1. Sushi bar as an idea for business - all the pros and cons

Sushi and other Japanese dishes were enjoyed by the Russian consumer. Thousands of customers visit these restaurants every day; other users order rice and fish dishes at home, in the office.

Sushi bars work in different formats: a market with delivery, a restaurant, a food court. The most promising option is different variations of sushi fast food with delicious dishes and fast service.

Pros of Business Idea:

 • high profitability;
 • quick payback with competent marketing;
 • relatively low starting investment;
 • simple production technology;
 • no need to rent a large area;
 • steady demand for products.

Minuses:

 • high competition;
 • high rent;
 • the difficulties of selecting qualified chefs of Japanese cuisine;
 • seasonality - peak demand for products falls in the autumn and winter, in the spring and summer there is a slight decline.

2. Opening methods

There are several ways to open a sushi bar - on your own, using personal or borrowed funds of start-up capital or under a franchise, that is, joining an existing restaurant chain interested in expanding and opening new branches.

Consider the features of both methods.

Independently

You yourself determine the format of the institution, look for a place, conclude a lease agreement, hire staff, arrange the interior, make advertising.

For a successful start and speedy achievement of profitability, you need a good business plan, competitor analysis, finance for the purchase of equipment and initial purchase of products. It is advisable to have experience in starting a business, to know the production technology. We need a “safety cushion” - money for unforeseen starting expenses.

By franchise

Franchise - your right to open an institution under the leadership of the owners of a network of sushi bars or restaurants that have already established themselves in the market. Such brands already have a recognizable name, a customer audience. They are interested in expanding, training personnel. By joining such a network, you will get experience, specialist support and certain guarantees of success.

An example of a company providing franchising services in the restaurant industry -.

The brand is actively developing in the international and Russian market, is well recognized, has an effective management strategy. It’s easy to join the network: choose the format of the institution that interests you, submit an application, sign an agreement and develop your business.

3. What are the formats of sushi bar

According to experts of the restaurant market, the current task of public catering establishments is to turn a trip into a restaurant not into luxury, but into necessity. Sushi bars successfully cope with this. All over the world, several formats of such establishments are used, the purpose of which is to always be at hand so that the visitor can stop by at any time, eat delicious food, buy their favorite dishes on the road or order their home delivery.

So, in addition to the classic restaurant, street, food court, island, and sushi delivery formats appeared. Let us dwell on each of them in more detail.

Street with a waiting area

This is a small room (up to 80 sq. Meters) with two entrances, a contact rack for receiving orders, a waiting area and a kitchen. The institution is focused on a menu with affordable prices, a simple assortment, a quick serving of dishes.

Fast service and delicious food - everything most visitors need

At the start of an institution of this format, you will need about 1.8 million rubles. The projected average monthly profit for the year is 209,300 rubles with successful management and good advertising.

Food-Court with a kitchen factory

Food court with kitchen - a comfortable small restaurant or a showcase with several tables in the shopping and entertainment center, where visitors order sushi and rolls. Its area does not exceed 30-50 square meters. meters. The structure has several seats, a contact rack for orders, a kitchen.

Here you can eat or take your favorite treats with you.

At the start of the food court, you need an amount of 2.4 million rubles. According to forecasts, the average monthly net profit of the institution for the first year will be 146,000 rubles.

Restaurant with seating and display cases

This is a full-fledged family restaurant with an area of 80-120 square meters, located both in the shopping center and in a separate room. The menu includes not only sushi, but also other dishes of Japanese cuisine, seafood.

Japan's atmosphere and delicious food attract visitors all year round

The emphasis of the restaurant is a cozy atmosphere, high quality service, delicious original dishes. You will spend about 3.7 million rubles on starting a business in this format. The expected profit for the first year is 297,000 rubles. (monthly average).

Island with landing

This is a mini-area of 20-30 square meters. meters with a contact rack, a showcase and several seats, as well as a small kitchen.

The purpose of the island is a food market, that is, the sale of ready-made dishes that customers take away or can taste on the spot, sitting at a small counter. The island is located in the passageways of shopping centers.

Sushi island in the shopping center - an opportunity for visitors to eat without stopping from shopping and entertainment

The cost of opening the island is estimated at 1.5 million rubles. Expected profit: 290,000 rubles.

Home delivery

An institution with a small area (up to 50 square meters), a contact desk, a sofa or armchairs for waiting visitors, a kitchen area. Orientation - courier delivery of finished dishes around the city on orders on the site.

With the most economical expenses at the start, you will spend 250,000 rubles on opening a “point”. With proper business management, such a project goes to zero within 3-4 months of work.

4. How to open a sushi bar from scratch - a detailed guide

Opening your own business is a multi-stage work consisting of market analysis, planning, staffing, menu preparation, supplier search, advertising campaigns.

Choose your sushi bar format and take action.

Step 1. We draw up a business plan

This is a step-by-step guide that shows everything about launching a catering point: from the concept and the rationale for its choice, to the list of menu dishes and marketing strategies. The plan includes a calculation part with a description of starting and monthly expenses, the size of the announced net profit, and the deadlines for reaching the breakeven point.

Not sure how to draw up a business plan? On the Internet there are many samples of ready-made plans for the restaurant industry. Choose the one closest to your concept and adapt it to your tasks and goals.

Step 2. Register your business

To register a case, issue an IP. OKVED for registration of a sushi bar 56.10 - restaurants and the provision of food delivery services. The code 56.10.1 that applies to the activity of all forms of restaurant business (cafeterias, bars, restaurants), 53.30, 55.4, 55.52, which also regulates activities in the field of public catering, is suitable.

The best option for a sushi delivery tax system is the simplified tax system or the simplified system. For the restaurant is used UTII. If you intend to conduct both restaurant operation and delivery, use both systems.

In addition to the documents for starting a business, you will need a license to sell alcohol (if you intend to sell it), permission from Rospotrebnadzor, the conclusion of the SES, and the fire service.

Step 3. Choose a room

The choice of premises is based on the format that you use for your business. Food court, island and street, it is advisable to open in a shopping center, in the passage places visited.

It is advisable to locate the restaurant in the part of the city where the mall is concentrated and there are many people every day.

For sushi delivery, the territorial location of the institution is not so important, since this form of business is connected with the site and courier service.

The key factor in the choice of premises for rent is its compliance with fire standards, SES requirements, safety measures, and the cost of rent.

After choosing a room, try to negotiate with the landlord about reducing rent for the first 2-3 months.

Many landlords agree to a lower price if they pay in advance in the amount of the full monthly rental price. When drawing up a lease, reflect all the conditions of cooperation so that you do not have to face an unexpected “change of mood” of the owner of the area.

Step 4. We buy equipment

I’ll give an example of the purchase of equipment for a small (50 sq. Meters) sushi delivery, since among all the formats for its opening, the minimum starting capital is needed:

Type of equipment Cost in rubles
1 Kitchen racks, contact rack, sofa and table for waiting for an order50 000
2 Refrigerator20 000
3 Freezer15 000
4 2 rice cookers12 000
5 Kitchen scale3 000
6 Boxes, knives, dishes, small equipment for the kitchen15 000
7 Computer + base 1C, video surveillance30 000
Total: 145 000

Step 5. We select staff

To open a small sushi delivery, you need a small staff: 2 cooks, 2 dispatchers, 2 couriers. Personnel should have sanitary books and work clothing. Look for cooks with experience who know how to make several types of sushi.

Table of monthly staff costs:

Step 6. We make the menu and buy products

Ask your cooks to make all kinds of sushi and rolls they know. Invite your friends or family members to choose the most delicious. The key to success of any institution is delicious cuisine, so you must be sure of the quality and taste of the dishes. Having gradually mastered the market and customer demand, you will add or remove some dishes from the list.

For an uninterrupted supply, look for 2-3 suppliers of products. Constantly monitor the prices and assortment that they offer. Suppliers compete with each other. To win this competition, show them the prices of competitors, ask for discounts, check the quality of products.

Step 7. Launch advertising and wait for customers

Make your own site where customers will watch menus, work schedules, book tables or order food at home. The main thing in sushi bar online advertising is effective photos of dishes and competent promotion in Yandex and Google.

To do this, you need SEO-optimization of the site: in your region, it should be located on the first page of search results so that customers can easily find you.

Having built an audience, offer customers bonuses, discount cards, “compliments” from the chef, closely monitor the quality of dishes and service.

Do not know what to name the bar and what logo to come up with? Entrust it to professional designers. Among them are many freelancers who are ready to offer several options at a price quite affordable for a novice entrepreneur.

5. How much does it cost

For the opening of a small point for the delivery of sushi and rolls to your home, with all the starting costs, it will take 250,000 rubles. This amount includes payment of rent, cost of equipment, initial purchase of products, advertising, hiring staff.

For comparison, the costs of opening an island with seats for a franchise:

To the total amount add 400 000 rubles of a lump-sum payment.

Opening a franchise is more expensive, but this method guarantees you the success of the enterprise. Working on a franchise, you can easily overcome all the difficulties that await novice restaurateurs.

6. Possible difficulties in opening a sushi bar

As a restaurateur, starting from scratch, you run the risk of facing such difficulties:

 1. Weak advertising campaign that does not attract the desired number of customers.
 2. Ignorance of the market and competition.
 3. Difficulties with setting up the coordinated work of the bar.
 4. Frequent personnel changes, difficulties in attracting qualified specialists.
 5. Low quality of purchased products.
 6. Incorrect menu design.
 7. Difficulties with the correct preparation of tax reporting documents.

For many years now, sushi bars have been experiencing the peak of their popularity. These establishments are impossible to see empty day or night. And to get there on holidays sometimes seems like an impossible task - you have to book a table in advance. However, in order to reach this level as quickly as possible, you need to clearly draw up a sushi bar business plan and stick to it.

Step 1. Choosing an area

First of all, you have to decide where your future institution will be located. There are many options. In particular, these are the expensive central areas of the city, where fashion boutiques and fashionable restaurants are concentrated. However, in this case, the business plan of the sushi bar must be drawn up in such a way that the establishment matches the luxurious surroundings.

Everything should be ideal - and the level of service, and the menu, and pricing. Of course, renting a room in such a place will cost you a round sum, but keep in mind that your prices will be quite high.

An alternative is the opening of a small democratic sushi bar with low prices in the area of congestion of offices, on the territory of shopping and entertainment complexes or in the vicinity of other food outlets (provided that such an institution is not there). The rental price will be lower, and the main income will come from high attendance.

Sushi bars are opened both in sleeping areas and in small towns. They can also be cost-effective, because Japanese cuisine is very in demand, and those who wish to spend time in your establishment will certainly be found. However, prices in this case should not be too high - this will scare off a fair share of customers.

Step 2. Choosing a room

As for the size of the room, it can start from 30 m 2 (we are talking about the area of the hall for visitors) and reach 300 m 2 or more (if you are going to create a large institution).

It is important that the premises you choose comply with certain regulatory requirements - in particular, sanitary-epidemiological and fire-fighting.

Once you find a suitable room, you can move on.

Step 3. Registration of activities and obtaining licenses

What documents are needed to open a sushi bar? In fact, this is a very important issue that should be carefully studied.

First, you will need to register the company itself. This can be done both as an individual entrepreneur and as an LLC. It is believed that opening an IP and conducting business documentation is not as difficult as for an LLC.

To register with the tax authorities, it will be necessary to select the appropriate activity codes for OKVED:

 • 55.30 - “The activity of restaurants and cafes”;
 • 55.4 - “Activity of bars”;
 • 55.52 - "Supply of catering products."

Secondly, it is necessary to choose a tax system. First of all, one should start from the planned activities and the size of the hall for visitors. For a hall with an area of up to 150 m2 you can use a simpler system - UTII (single tax on imputed income). However, if the area of the premises exceeds the specified figure, you will pay a simplified tax (STS) - 15% of the net profit of the institution.

If, being interested in how to open a sushi bar from scratch, you plan to carry out not only customer service directly on the premises, but also delivery of food to your home / office, you will have to keep separate records and use two tax systems at the same time. For the catering system in the sushi bar, UTII will be used, and for delivery - USN.

What do you need to open a sushi bar yet? The whole list of documents must be agreed with Rospotrebnadzor. It is important that all your employees receive medical records.

Another important point concerns the sale of alcoholic beverages. If you want to include alcohol in the menu of your institution, you will also need to obtain an appropriate license.

Step 4. Purchase of equipment

We continue to draw up a business plan for the sushi bar. At this stage, our task is to purchase all the required equipment. Depending on the characteristics of your institution, the full list may be adjusted, however, its basis remains unchanged:

 • a set of specialized dishes for cooking rice;
 • a machine for making sushi and rolls;
 • thermoses for storing cooked rice for sushi;
 • refrigerators in which seafood and other ingredients will be stored;
 • various equipment for cooking;
 • sushi cases - special glass refrigerated cabinets with a given temperature and humidity, designed to store finished products;
 • dishes.

What equipment is needed for a sushi bar other than what we have already named? If your restaurant’s menu contains exclusively cold dishes (sushi, sashimi, rolls, etc.), such a set of equipment will be more than enough. If you plan to add hot dishes to the menu, you will need not only additional equipment, but also new staff.

An interesting fact: according to the estimates of entrepreneurs who work in this area, approximately 60% of orders are for cold dishes, and only 10% for hot dishes. The remaining 30% are orders from the bar.

Step 5. Recruitment

A few decades ago, when Japanese cuisine was just beginning to develop in our country, specialist chefs were discharged directly from Japan. Of course, it was worth this pleasure. However, today, after the discovery of a huge number of courses and the growing popularity of sushi, it is not at all difficult to find an experienced and talented sushi.

Being interested in how to open a sushi bar from scratch, you need to consider that an impressive staff of employees is required for a Japanese restaurant, among which there must be:

 • chef;
 • several sushi cooks;
 • cooks specializing in hot dishes;
 • kitchen workers;
 • waiters
 • cashiers;
 • accountant;
 • product and other product purchasing manager.

Of course, some workers may combine several functions. For example, waiters can fulfill the duties of cashiers, etc. However, this is unacceptable for a prestigious establishment.

Step 6. Shopping

When compiling a business plan for a sushi bar, be sure to think about where you will buy products. Even the ingenious sushi will not be able to make real sushi if he does not have suitable products. Rice, fish, vinegar, sugar and salt should be Japanese. And these are not whims at all.

Sushi made with our local products can please only those who have never tasted real ones. Focusing on such visitors, one should not count on big profits either.

Step 7. Room decoration

It is desirable that the oriental flavor in the design of the hall is combined with true European comfort. You should not seat visitors on mats and force them to eat exclusively with chopsticks. Leave a corner in your institution for those who want to relax in the traditional Japanese style, but buy beautiful and stylish furniture for the sushi bar (more precisely, for the rest of the hall). Chopsticks should be offered to absolutely everyone, but at the first request, familiar European cutlery should be issued.

Step 8. Cost Analysis

To summarize and try to determine what starting capital you will need to open your own sushi bar:

 • room rental - 200 thousand rubles per month;
 • repair and decoration of the hall - 1 million rubles;
 • purchase of furniture and utensils for the main hall, kitchen and bar - 2.5 million rubles;
 • purchase of equipment - 200 thousand rubles;
 • first purchase of products - 500 thousand rubles;
 • salary to employees for the first month of work - 300 thousand rubles;
 • additional costs (registration of licenses and documents, utility bills, transportation costs) - 300 thousand rubles.

In total, about 4 million rubles will be required to open an average sushi bar.

Of course, in small towns, spending will also be significantly lower. However, the ratios between the various costs will remain approximately the same. That is, making your own business plan, you can easily navigate in the numbers characteristic of the city in which you live. Keep in mind that the price level, and as a result, the profit you will receive will also be lower.

Step 9. Assessment of the project prospects

Think it's expensive? However, it should be borne in mind that the profit of an institution of this type can reach 250-300 thousand rubles per month. The profitability of the sushi bar is extremely high - your starting investment can fully pay off in 1-1.5 years.

To open a profitable business, you need to find a good niche. Most really profitable niches have long been occupied and the competition in them is very high. But there are many free industries in which you do not have to fight for a place in the sun for a minimum income. One such niche is home delivery of sushi. And if in big cities this business is more or less established, then in medium and small towns it is generally absent, despite the presence of demand.

Why is it profitable

The popularity of oriental food in Russia is growing every day - sushi and rolls have become almost national dishes. They are ordered home for a romantic evening, in the office for a snack, in a large company for parties.

Sushi is a delicious and nutritious food that is popular.

At the same time, people often do not want or do not have the opportunity to go to a sushi bar. They prefer to call or order delicious food online. But there are very few really good delivery services. That is, we have a demanded service in the complete absence of competitors.

How to calculate profitability

In order to evaluate profitability, you need to makesushi and roll business delivery plan in your city. To do this, you need to study the market in your city and find out about the presence of competitors. If they are, then evaluate the list of their services, the average cost of land, delivery time, working hours, etc. You need to find their mistakes and offer the best conditions for customers.

You will also need to think through and describe the following points:

 1. Is there any demand in your city.
 2. What expenses are necessary to start an activity.
 3. How customers will find out about you.
 4. How delivery will be organized.

Estimate demand

We already wrote above that sushi is a popular and demanded food in Russia. We will add what exactly delivery is good and what advantage it gives in front of the restaurant.

The main advantage of food delivery is saving time. Not everyone has the opportunity to go to lunch or in the evening to a restaurant to spend a couple of hours there. When ordering delivery, the client saves time: he can normally have a meal at lunchtime or relax in the evening after work, and not go across the city to a catering establishment.

The second plus is the savings. Even with delivery to the address, sushi and rolls often come out cheaper than in a restaurant because of its extra charges. Well, and thirdly, it is just convenient. Many people do not like to go to sushi bars. They just want to sit at home, eating tasty food for an interesting movie. There are a lot of such people, and they will become the “backbone” of your business.

Sets are a good choice for large companies

How to work

There are two options:

 1. Sushi delivery of our own production.
 2. Sushi delivery from working restaurants and bars.

The second option is the most budgetary and simple, but it brings a minimum of profit. It also has many risks, since you cannot influence the quality of the final product. To start such a business is only if you do not have start-up capital or for some reason you cannot open your production.

The second option is more preferable. To do this, you will need to organize your kitchen, independently purchase products and deliver your products to customers. In this case, the costs will be higher, but the profit will grow significantly. In addition, you will be able to control the entire process and develop, subsequently opening a whole network in the region or a full-fledged restaurant.

Registration

Before you open sushi delivery , should come to the tax office and register as an individual entrepreneur or LLC. With IP, there is less paperwork, but LLC will allow you to conclude contracts for the regular supply of food to offices or even restaurants. If you open your own kitchen, then you will also need to pick up a room (even 20m2 is enough) and apply for permits to the sanitary office and the fire department.

What do you need to buy?

If you intend to deliver already cooked food, then you don’t have to buy anything at all. In fact, you can do without even a car - hire a driver and pay him a certain percentage of each order.

If you organize your own production, then you will need:

 1. To rent a room (approximately 30 thousand per month).
 2. Make repairs in it, install an exhaust hood and fire alarm (approximately 20,000 rubles).
 3. Buy professional rice cooker, refrigerator, thermoses and kitchen utensils (about 60 000 rubles).
 4. Buy a car (optional) - 250 thousand.
 5. Install a refrigerator in the car (10 000 rubles).

Note:you don’t have to rent a room in the very center - it’s better to choose a place in a residential area near the highway, so as not to stand idle in traffic jams.

Buying a car is also an optional condition. It’s easier to find a good driver who will deliver orders around the city for 70-100 rubles.

The team will consist of 3 people:

 1. An operator who will take orders by telephone and online.
 2. Cook.
 3. Driver.

At first, you can play one of these roles - this will allow you to quickly recoup investments.

In total, you will spend about 250 thousand rubles on opening (excluding the cost of the car).

Mandatory monthly expenses will be:

 1. RFP for staff (45,000 rubles).
 2. Rent and utilities (35 000 rubles).

You will also need to spend about 10 thousand on advertising.

Basic principles of work

Your business will be successful only in one case - if you comply with everything that we list below.

 1. Be sure to monitor the quality of products. Everything should be fresh, tasty and appetizing.
 2. Delivery should take the minimum time. It is optimal to ensure that people call in advance and make an order for a specific time. You must be as punctual as possible.
 3. Quality advertising. You will need to not only distribute paper advertising, but also create profile topics in city forums, on social networks, ideally create your own website with an order form and phones. You can decorate the car with advertising and order the placement of several billboards.
 4. Carry out various promotions for customers. Create large sets for companies, enter a discount system, make discounts.

Profitability

How profitable is opening a delivery? The cost of one unit of land is about 8 rubles, while it is sold for 40-50. Usually one person orders 6-10 sushi. On average, a similar business brings 200,000 rubles a month, of which about 70-80 will be “clean”. Thus, all investments pay off in 4 months.

You can increase profitability by expanding the range. Offer customers juices and soda, add pizza to the menu - this will allow you to reach a large audience and build the most effective business.
